In Luxembourg, where I grew up, good bread was abundant (thank you French culinary influence!!!) and one of the most simple and yet delicious meals was to make yourself a ‘schmier’. It’s pretty much what American would call an open faced sandwich, with the difference that we would use freshly baked bread and top it with our favorite ingredients such as nut butters, choco butter, cheese and veggies.
It’s not uncommon to have a ‘schmier’ for dinner in Luxembourg and I didn’t start eating hot food for dinner until I moved to the US. So sometimes, especially when it’s really warm out and I feel like cooking could provoke instant melting of myself, I love eating a ‘schmier’, no matter if it’s breakfast, lunch or dinner.
Savory or sweet – it’s totally your choice! And honestly, why not have both? 😉
On the savory side, I love to keep it simple. The essential part is really the bread – you can go with fresh sourdough, a delicious miche or freshly baked pumpernickel (this was my choice here). I like to top it with some arugula, raw mushrooms, avocado and plenty of fresh sprouts. Just add some sea salt or cracked pepper on top – et voilà!
One the sweet side, I am definitely a little more Americanized 😉 Peanut butter is an allstar and I love the crunchy one. I add some choco chips, fresh strawberries as well as some coconut chips on top (these are spicy lime) for a savory kick. Yum!
These are such simple and yet healthy and nourishing meals that can be prepared in minutes and make a perfectly balanced meal!
