Tofu is incredible versatile because it comes in different consistencies which makes it suitable for all kinds of sweet and savory dishes. Tofu scramble for example, it an incredibly delicious alternative to egg scramble and it’s better for your health too 😉 It’s SO easy to make and the results are spectacular. You can use a regular skillet or a cast iron.
I love serving this scramble with some toasted bread. My favorite is nut and fruit mana bread – it has an almost cake like consistency and it’s lightly sweetened taste goes so well with the savory scramble. By the way, tofu scramble is not only great for breakfast and brunch but also fantastic for a quick weeknight dinner. You can serve some roasted sweet potatoes on the side and maybe a green salad – et voilà!
Makes 2 portions, 15 minutes in total
- 8 ounces firm tofu
- 4 cups spinach
- 1/2 purple onion
- 1/4 tsp salt
- 1/4 tsp cumin
- 1/2 tsp smokey paprika
- 1/2 tsp tumeric
- a little bit of oil for frying
- 2 slices of bread on the side
1.Take out your tofu and drain it as much as possible with paper towel.
2.Chop up the onion and with a little bit of oil and a pinch of salt, start frying it in your skillet.
3.Add all spices in a little bowl and add about 1 tbsp or more of water until it forms a liquid sauce.
4. When the onion starts getting trans lucid, add spinach until lightly cooked.
5. Scramble tofu in little pieces with a fork, then add to the the rest. Pour spice mix on top and fry for another 2 minutes on medium heat.
Enjoy with some bread or a green salad on the side!
