Before my vegan days, I never liked mayo. I find it pretty flavorless and pretty heavy. When I turned vegan, I discovered vegan mayo and I grew to love it. I still wouldn’t eat it by the spoon but I actually think that it tastes good and adds a nice creaminess to certain salads. I love it with chickpeas actually and came up with this easy chickpea salad. For the mayo, I usually buy Follow Your Heart Better Than Mayo – reduced fat is a good option as it still has more than enough fat and keep in mind it’s a processed food so don’t binge on it 😉 I love this salad as a lunch or an appetizer for a bigger meal. You can eat it as is or serve it with some healthy chips on the side.
- 1 can of chickpeas (buy the one without salt)
- 2 scallions (chopped up)
- 1 tbsp vegan mayo
- 1 tbsp smoky paprika
- 1 tsp lemon juice
- 1 tsp of garlic paste
- salt and pepper to taste
- Open can of chickpeas, drain and rinse.
- Put chickpeas in a mixing bowl and add all the other ingredients except for the smoked paprika.
- Stir well until everything is mixed and add smoked paprika at the end.
