One of the more challenging things that non vegans who aspire to be vegan tell me about, is replacing cheese. Especially in certain dishes, cheese is often the key for flavor and consistency. Now let’s think for a second what cheese provides us with? Mainly fat and salt. These are the two reasons why it tastes so good and why we love adding it to lots of dishes. There is fat and salt in plants so it’s pretty easy to create a vegan recipe that tastes delicious and makes us not miss anything. For pesto, we replace the fat/salt from the cheese, with seeds and nutritional yeast (high in B12!) for the nutty flavor. My pesto recipe is super easy and super fast and I promise you won’t miss anything!
5 minutes, 1 cup
- 2 cups of fresh arugula
- 1/2 cup olive oil
- 1/2 cup raw sunflower seeds
- 2 tbsp nutritional yeast
- 1 tsp crushed garlic
- Put everything in a blender and blend until smooth. I don’t really add salt but you can add some if you like. Not necessary though.
Enjoy on top of pasta, pizza or toast!
