It’s really hard to convince me that a burger place can actually provide me with healthy and nutritious food. The problem is the fact that burger places often only serve fried, greasy and heavily processed ‘foods’.
I have recently been proven wrong: By Chloé is a new vegan joint that opened this summer in NYC. The chef and owner is Chloe Costarelly, who was the first vegan chef to win the cupcake wars. Her restaurant looks like a cute fancy diner and serves mainly: burgers!
I have been there a couple times now and had the joy to try a diversity of dishes that were all delicious and healthy. Chloe seems to really make it a point to minimally process her foods, avoid too much fried stuff, use healthy fats such as avocados and offer a lot of salad options too.
My favorite so far is the Quinoa Taco Salad as well as the sweet potato fries. They are actually baked and come with a side of beet ketchup – just divine (and way healthier than your typical fries). As for the salad, it’s just the perfect mix of avocado, quinoa, sweet corn, beans, greens and spicy vegan chorizo topped with taco chips. The dressing is a vinegar based avocado dressing which blends in perfectly with the rest of the salad and makes it both light and flavorful.
Another must try is the Thai Salad. It comes with quinoa, edamame as well as apricot sriracha glazed tempeh. All rounded up with a peanut dressing – so yummy and filling!
If you want to end your meal on a sweet note, I would recommend a chocolate chip cookie with a glass of almond milk.
