Mochis are my favorite – they are little glutinous rice cakes from Japan. I am truly obsessed with them because I love the sticky texture. They often come filled with sweet red bean paste which is just delightful. So I thought, why not use sticky rice flour to make pancakes? And here they are – sticky, sweet and delicious – your perfect weekend brunch food!
- 2 cups sweet rice flour
- 1/3 cup corn starch
- 2 ½ tsp baking powder
- 2 flax eggs
- 2/3 cup milk
- 1 tsp vanilla
- Pinch of salt
- Mix all the ingredients together well.
- Heat your skillet to a low temperature with some coconut oil.
- Pour 1 big tablespoon of batter in your skillet and bake on two sides until crispy brown.
- Repeat until batter is all baked, while regularly adding coconut oil.
Serve with some maple syrup and nuts…hmmm…heavenly!
Also, you can add chocolate chips or nuts in the batter for an extra crunch.
