Lavender gives a delightful floral touch to a lot of sweet recipes and baked goods, such as cookies. It mixes particularly well with the simplicity of oats and the creaminess of cashews. In this recipes, I used oat flour that I made myself by dehydrating oat groats for 8 hours and then blending them in a food processor. My flour was hence super fine and fresh. To save time, you can also use store bought flour or simply blend oats.
I also used a raw cashew butter in my recipe. You can make your own cashew butter as well, in the same way you would make any nut butter. It requires some patience and time though. The orange peel that I added to the recipe gives the cookies a little fruity touch and it’s just so complementary with the lavender. In my opinion, these cookies tastes like a summer afternoon in the Provence so I hope you will love them as much as I do!
Makes 8 cookies
3 tbsp cashew butter
1 tsp orange zest
1 tsp lavender
1/2 cup oat flour
3 tsp maple syrup
1 pinch of salt
- Mix all ingredients in a bowl until well combined.
- Form little cookies and lay out on a non stick baking sheet
- Bake at 375° for 10-12 min.
- Enjoy with your favorite ice cream or just as is.
