How did you come up with the idea of launching Ponycakes?
For about 5 minutes, my husband and I were going to buy a house with a potential bakery underneath in Hudson, NY. Ponycakes was my nickname, and it was fitting for the bakery. When we realized that moving there was not for us, the idea of the Ponycakes business stuck, and I developed my first product, the Midnight Pony cookie sandwich, from a dessert I had created for a private supper club event I cooked for.
Why are your products gluten free? Is it for health reasons?
I don’t find it hard to compete with non-vegan items, because of the fact that I put a lot of time to make sure they don’t taste “vegan”. I will say, the biggest stigma or issue I encounter is that a lot of people associate veganism with all of the other food trends out there. The fact of the matter is, you can be a healthy vegan, you can be a junk food vegan. Just like any other kind of “diet”. I have two segments of Ponycakes, the ultra decadent desserts, and our everyday line, which is made with no refined sugars, cashew and coconut butters, etc. The fact that they are vegan is representative of my decision that animals do not need to be part of our food chain. But dessert is dessert, and I want that to taste delicious! I hope we get to a place where veganism is just a normal thing, and what you choose to eat for your health is separate.
What’s your favorite food?
Hmmmmm, that is a REALLY hard question!! Very good chocolate, tahini, and medjool dates.
Are there any new products in the making?
Oh, yes, all the time! I wish I had two more hands and ten more full energy hours in the day to make all of the things I dream of putting out there! I am very excited about our newest launch, happening as we speak. We are just putting out to stores our Sesame Clusters, which I describe as a Middle Eastern peanut brittle (except peanut-free!). Just ten lovely ingredients, including cashew, almond, buckwheat, coconut, this gorgeous maple syrup from Vermont, tahini, cardamom, cumin, and coriander. It is so addictive and delicious!
What is your biggest dream for Ponycakes?
I would love to see Ponycakes become a go-to for delicious treats for everybody! On a personal note, we would like to get to the point where we can convert to the lowest impact in regards to waste and shipping, become stronger partners with the organizations that we currently support, and put out a couple of cookbooks in the meantime 🙂
Any predictions on how veganism will evolve over the next couple of years? Do you think more and more people will get hooked?
