Falafel are traditionally fried and made from chickpeas. I decided to change up this traditional Middle Eastern food so my falafel are made from green peas and they are baked in the oven. Just a bit more colorful and way healthier. Botanically, peas are considered a fruit and they are really high in fiber as well as protein, which makes them a great alternative to chickpeas. You could absolutely use other types of beans or even lentils for these falafel as they have similar characteristics due to their starchiness and their protein content.
These falafel are delicious as a snack or on top of a salad or some pita bread. Simply add some greens to it and a tahini or balsamic dressing and call it a day 🙂
- small bag of frozen peas
- 1 cup raw almonds
- 1 cup parsley
- 1 cup tahini
- 2 tbsp corn starch
- 1 flax egg (1 tbs ground flax, 1 tbs water)
- salt, pepper, cumin, chili flakes
1.Pre heat the oven to 350°.
2.Process almonds in a food processor to flour and add parsley as well as spices.
3.Roughly chop frozen peas in a food processor.
4.Mix flour with spices, with peas and add corn starch, tahini and flax egg.
5.Form into little balls, then place on parchment paper on top of baking sheet and bake for 20-25 minutes.
