I love making granola, as you know because it’s so yummy, healthy and way cheaper when you make it yourself. I’ve been experimenting with alternatives to oats and I find quinoa a wonderful grain and it turns out it works great in granola as well! Try out this granola, that is inspired by more exotic flavors and great to mix it up with your more traditional recipes. I also don’t add any sugar to this one as the sweetness in the papaya does the job in my opinion.
- 1 cup quinoa (uncooked)
- 1/2 coconut flakes
- 1/2 dried papaya (get the unsweetened or low sugar version)
- 1/2 cup brazil nuts (chopped in little pieces)
- 1/2 cup pecan nuts (chopped in little pieces)
- 1/3 coconut oil (melted)
- Pre-heat oven to 450°.
- Mix all ingredients in a bowl, then put on a baking sheet.
- Bake for 9-10 minutes.
Enjoy on top of some coconut yogurt!
