Summer time is milkshake time because a) they are refreshing b) they are easy to make and c) they can be super healthy and nourishing!
I honestly love just adding different fruits and nut milks with some dates and spices together in a blender and see what comes out. This milkshake however, is a take on a banana milkshake that my dad used to make all the time. He never used coconut in it but it think it works super well together. The dates add natural sweetness and I recommend to use pretty ripe bananas so your smoothie doesn’t taste too ‘green’ if you know what I mean.
You can totally add other spices such as cinnamon or cardamon to give it an extra kick. Chocolate chips would taste great in it too, or just enjoy it with some cookies for dipping.
- 1 ripe banana
- 1 14ounce can of coconut milk (I love the SoDelicious lite culinary coconut milk for this!)
- 2-3 large medjool dates
- ¼ tbsp vanilla extract
- Add all ingredients in a high speed blender for 1-2 minutes.
- Pour in your favorite glass and top with some cinnamon.
